At Menade the harvest is hand picked, with the use of carbonic snow from the moment it is collected up until it is pressed.

The young range of Menade is made in stainless steel tanks with natural yeast, under controlled temperature of 18 C – 22 C. The tanks are of different capacities allowing the separation of the different parcels, conforming to the differences in structure and composition of the soil. Late maturity of the wine with its lees during this controlled time.

For the last two decades, we have been searching and selecting ‘pre-phyloxera’ vineyards based on their presentation, terroir and behaviour – for our Menade Terruño range. During vinification we press whole clusters, and the juice is placed in French oak barrels with wild yeast. The wine remains on its lees for a minimum of 8 months for our white wine (V3) and twelve for our red wine (Dominio de Morfeo).
