Variety: Verdejo at 100%

Viticulture: During the last 25 years we have search and selected pre feloxerico vineyards for its exposure, terroir, behaviour , and to this day we have eighteen plots in different localities. Organic natural viticulture.

Harvest: Manual. Using carbonic snow (-80ºC) from the moment of collection until it is pressed, allowing it to develop without any addition of sulphur.

Alcoholic fermentation: Pressed whole clusters after driving back the juice to 500 litre barrels of French oak of different years of life (new and up to 6 years of age). With wild yeasts (spontaneous, of the grape). Consistency of the wine due to constant ripening on its lees, in Menade’s facilities that date back to the eighteenth century. Minimum stay in the barrel is 8 months.

Stabilisation: Clarification with bentonite, natural stabilization against the cold, filtration should be needed and dependent on the vintage.

Colour: Predominance of yellow, bathed with golden reflections.

Aroma: Immediate presence of minerals, smoked and mature/ripe fruit. Unforgettable herbaceous currents – thyme, laurel and fennel.

Palate: Fatty, rich with a lot of volume. An extensive and fresh aftertaste.  Elegance, personality and tipicity are found at the end of this wine.
