Grape variety: Sauvignon 100%

Viticulture: Certified natural organic.  Treated in a special way that looks for a lower yield in order to obtain a higher maturity (concentrated).

Harvest: Manual/Hand picked. Use of carbonic snow (- 80°C) from the moment it is collected up until it is pressed, allowing it to develop without the need to add sulphur.

Alcoholic fermentation: Fermentation arrested by lowering the temperature with its juice that maintains a level of 60 to 80 grams of residual sugar, in stainless steel tanks with wild yeast (spontaneous, those of the grape). Temperature controlled at 18-22ºC. Late maturity of the wine with its lees during this controlled time.

Stabilization: Clarification with bentonite, natural stabilization against the cold, filtration.

Colour: Soft golden pale flashes.

Aroma: Noted white, exotic fruit sensations – such as pears in syrup. Wrapping in fragrances with typical provenance of the Sauvignon grape variety.

Palate: Inviting fruity sweetness that opens to the fresh and natural acidity. Persistent and mild in the retro taste.
